Coffee Aroma is fragrance of the coffee oil that emanates from a freshly brewed coffee. The coffee oil in coffee beans produces the aroma and responsible for all flavor attributes. The mouth feel of coffee is triggered from other coffee compounds through taste buds, and perceived by the tongue. Many Arabica coffees have particularly distinctive taste and pleasing aroma. Therefore, it is safe to say that coffee aroma is the most important attribute to the specialty coffee. Instant coffee also has the components that are responsible for stimulation of our taste buds. The difference, however, is that instant coffee lacks most of the volatile aromatic compounds during process which causes a major decrease in the overall flavor.
