Why does the ROAST Matter?


The Roast is the change in the color of coffee that occurs during the roasting process. The color of coffee changes from green, to brown, and eventually to black. This change in color occurs under high heat as the sugar in green coffee gradually caramelizes, causing the color to change to brown and eventually black. This change in the color of coffee (i.e. the Roast) results in a change in the taste and flavor of the coffee based on the chosen Roast. For example, light roast coffee has a sour taste, and dark roast coffee has a bittersweet taste.
