Both processes begin by all the ripe red berries being picked from the trees and brought to a staging room. From there, the method of process varies according to the custom of the region. In Wet Process the coffee is carried by water current to a machine that will break the the berries to separate the seeds or coffee beans from the pulp. The separated beans will still be covered with a slimy membrane that needs to be removed, and are transported to the beneficio or milling house. This is where the beans are dried to remove the membrane. Some regions will sun dry by spreading coffee beans under the sun and raking them regularly to dry evenly and avoid fermentation. Another method of drying is by placing the wet coffee in a large perforated moving tub for 24 hours under 60 degree Celsius temperture for dehydration.
In some regions of Africa, the farmers pick the coffee berries and spread them under the sun until the pulp dries and cracks thereby separating the seeds from the pulp. This way the juice of the pulp will integrate with the beans and add other characteristics to the coffee beans. This method of process is called the Dry Process.
