Water process is the new way of decaffeinating coffee through soaking green coffee beans in hot water until the beans expand, then applying carbon dioxide under pressure below 200 psi into a airtight container. The hot water will dissolve the wax from the skin of coffee to facilitate the removal of caffeine from the bean under pressure. After draining the hot water the decaf coffee will be dehydrated and caffeine in the water will be distilled and sold separately. This is the basic idea behind the water process; however, there are additional technical applications which are proprietary.
